- 4 pork chop
- 4 thick slices un peeled apple
- 4thick slices peeled sweet potato
- 4thick slices spanish onion
- savory
- nutmeg
- salt and pepper
- butter
PROCEDURE:
Trim excess fat from pork chops.Heat some of this
fat in a heavy skillet is well greased. Discard fat.Brown
chop lightly on both sides.Tear off13 inch(33cm)
length of heavy duty aluminum foil. Place a pork chop
on each.Top each with a slice of apple, potato and
onion. Add a pinch of savory, a dash of nutmeg , a
generous sprinkling of salt and pepper and a little dab
of butter to each. Wrap tightly, making double folds at
all joins in the foil. Roast over moderate coals until
chops are very tender and cooked through, about
1 hour.
NOTE:
Cook in 400F(205C) oven about 1 hour if desired.
