- 2cups raw corn(cut from cobs)
- 1tbsp finely chopped onion
- 1cup milk
- 2tbsp butter
- 1/2 tsp curry powder
- 1cup light cream
- 1/2tsp salt
- 1/8tsp pepper
- chopped parsley
Combine corn, and milk in medium saucepan. Bring to
a boil.Turn down heat, cover and simmer 20 minutes.
Pour into blender and buzz until nearly smooth. Heat
butter in same saucepan. Add curry powder and cook
gently 3 minutes, stir in corn mixture, cream, salt and
pepper. Heat stirring constanly. Taste and add more
seasoning if needed.Serve springkled with parsley.
