INGREDIENTS:
- 2 cups coarsely chopped cook chicken
- 5 oz can water chest nut chopped
- 2 cups cubed peaches
- 1/2 cup thinly slice celery
- 1/2 cup toasted slivered almonds
- 2/3 cups mayonnaise
- 1/2 tsp curry powder
- 1/4 tsp salt
- 1 tsp soya sauce
- 6 large melon wedges
- cantaloup or honey dew
- lettuce
PROCEDURE:
Combine Chicken, water chest nut,peaches, celery
and almonds in a medium bowl.
Blend mayonnaise,curry powder,salt and soya,sauce.
Pour over chicken mixture and toss lightly
to blend.
Chill.Spoon chicken mixture in to melon wedges
at serving time and set wedges lettuce
om serving plate.
