How to Prepare unique Raw Broccoli Salad




INGREDIENTS:

  • 1 1/2      broccoli
  • 1 tsp      salt
  • 1/4 tsp pepper
  • 1/3 cup salad oil
  • 2 tbsp lemon juice
  • 4 medium tomatoes
  • 1/3 cup commercial sour cream
  • 1 tsp prepared mustard
  • lettuce cups
PROCEDURE: 

Wash broccoli and drain well.
Cut off all the florets at the point where at the small
stems join the main stalk
(refrigerate the main stalk to cook separately as a vegetable or to add to soup)
Chop the florets very finely.
Put broccoli in a large bowl and sprinkle with salt and pepper.
Combined Salad oil and lemon juice and pour over.
Cover and chill for at least 30 minutes,stirring occasionally.
Peel tomatoes and cut in a smalls pieces,discarding seeds.
Add to broccoli.
Combined Cream and mustard and pour over.
Mixed well. Spoon into lettuce cups on serving plates 
and serve immedietely

INGREDIENTS:
  • 2 cups coarsely chopped cook chicken
  • 5 oz can water chest nut chopped 
  • 2 cups cubed peaches
  • 1/2 cup thinly slice celery
  • 1/2 cup toasted slivered almonds
  • 2/3 cups mayonnaise
  • 1/2 tsp curry powder 
  • 1/4 tsp salt 
  • 1 tsp soya sauce
  • 6 large melon wedges
  • cantaloup or honey dew
  • lettuce

PROCEDURE: 


Combine Chicken, water chest nut,peaches, celery
and almonds in a medium bowl.
Blend mayonnaise,curry powder,salt and soya,sauce.
Pour over chicken mixture and toss lightly
to blend.
Chill.Spoon chicken mixture in to melon wedges
at serving time and set wedges lettuce
om serving plate.
