How To Cook a Leg Of Lamb "SPANISH STYLE"

INGREDIENTS:
 

  • 6 to 7-lb leg of lamb
  • 2tbsp olive oil
  • 2cloves garlic,crushed
  • 1tsp salt
  • 1/2tsp coarse-cracked parsley
  • 1tbsp finely chopped parsley
  • 2thin slices cooked ham
PROCEDURE:
  Heat oven to 350F(160C)

Put leg of lamb on rack in roasting pan. Combine olive oil,
garlic,salt,pepper and parsley.Spread some of this mixture
on the slices of ham.Cut the ham into thin strips.Cut deep
gashes all over the leg of lamb with the point of a sharp knife
and force one of ham strips down into each gash with a finger.
Rub meat all over with remaining oil mixture.Roast to 170F
(76C) on meat thermometer for pink -25 minutes a lb(450g)
or 180F(82C) for well done-30 minutes a lb (450g).
