How To Cook a Curried Shrimp and Egg Cocktail




INGREDIENTS:
  •  3tbsp mayonnaise
  • 1/4cup natural yogurt
  • 2tsp curry powder
  • 1/4cup commercial chutney
  •             chopped if necessary
  • 2tsp lemon juice
  • 1tbsp raisins
  • 1 lb small frozen cooked shrimp, thawed
  • 3 hard-cooked eggs,chopped
  • iceberg lettuce
PROCEDURE:

   Combine mayonnaise,yogurt,curry powder,chutney
and lemon juice,stirring to blend well.Add remaining 
ingredients except lettuce. Blend and chill.
Shred enough lettuce to line the bottoms of 8 sherbet
glasses or seafoods cocktail glasses.Put the lettuce in 
the glasses at serving time and spoon in shrimp mixture.
Serve immediately.
