How To Cook Broiled Scampi,.?

  • 11/2 lb fresh or thawed frozen scampi 
  • 2 cloves garlic,crushed                   
  • 2 tsp salt salt
  • 3/4 cup olive oil
  • 1/4 cup finely chopped parsley
  • 1/8 tsp dried leaf tarragon 
  • 2 tsp lemon juice 
  • freshly ground black pepper
  • 3/4  cup butter,melted
  • 1/2  fine dry bread crumbs
PROCEDURE:

Wash scampi and cut away undershells with  kitchen shears.

Heat Broiler
Add garlic,salt,oil, parsley,tarragon,lemon juice,and a grating 
of a pepper melt butter.Dip each scampi into this mixture 
and then into bread crumbs.Put in a single layer on shallow
baking pan,shells side down.Broil under the broiler 
five minutes,spooning a little of the remaining sauce over
during broiling.Pour remaining sauce mixture into small
individual dishes for dipping scampi meat.Serve immediately....
