How To Cook a Baked Haddock and Grapefruit






INGREDIENTS:

  • 1 1/2-lb haddock fillets
  • 1tsp salt
  • 1/8tsp pepper
  • 2tbsp grapefruit juice
  • 3/4cup- 1/2-inch(1.25cm)soft bread cubes
  • 3tbsp butter,melted
  • 1/4tsp dried leaf thyme
  • 1 grapefruit, sectioned
  • melted butter
PROCEDURE:   
       
    Heat oven to 400F(205C).Butter a shallow baking pan,
about 12x7x2 inches (30.5x18x 5cm)
Cut fish into serving-size pieces. Sprinkle both sides with
the salt and pepper and lay in prepared pan in a single 
layer. Sprinkle with grapefruit juice. Mix bread cubes, butter
and thyme and sprinkle over fish. Bake 15 minutes.Lay section
of grapefruit on top of fish.Bush them lightly with butter and 
continue baking 10 minutes more or until fish flakes easily 
with a fork. Serve immediately.
